Tomato based soup with beans, meat, pasta and veggies....yummy!
Ingredients:
1 lb. ground beef/turkey - whatever you desire...
1 small onion
1 large carrot - shredded
3 celery stalks
2 cloves of garlic
2 - (14 1/2 oz) can of diced tomatoes
1 (15 oz) can of red kidney beans
1 (15 oz) can of northern beans or cannelini beans
2 (11 1/2 oz) can of v-8 juice - make sure there is nothing in the juice that you react to!
1 1/2 teaspoon salt
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon pepper
1/2 teaspoon thyme
1/2 pound of Mrs. Leepers corn rotelli - or a small gluten free pasta
1 small package of fancy shredded parmesan cheese
Directions:
Saute onion, carrot, celery, garlic - 10 minutes. Put in stock pot. Brown ground beef. Once browned, drain, put in stock pot. Add remaining incredients except parmesan cheese. Simmer on low for 50 minutes. Once the 35 minutes has passed, start to boil some water and make pasta as directed on the box. At 50 minutes add your cooked pasta.
Top with shredded parmesan.
