Title: Christine's Pasta Fagioli

Description:
Tomato based soup with beans, meat, pasta and veggies....yummy!

Ingredients:
1 lb. ground beef/turkey - whatever you desire...
1 small onion
1 large carrot - shredded
3 celery stalks
2 cloves of garlic
2 - (14 1/2 oz) can of diced tomatoes
1 (15 oz) can of red kidney beans
1 (15 oz) can of northern beans or cannelini beans
2 (11 1/2 oz) can of v-8 juice - make sure there is nothing in the juice that you react to!
1 1/2 teaspoon salt
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon pepper
1/2 teaspoon thyme
1/2 pound of Mrs. Leepers corn rotelli - or a small gluten free pasta
1 small package of fancy shredded parmesan cheese



Directions:
Saute onion, carrot, celery, garlic - 10 minutes. Put in stock pot. Brown ground beef. Once browned, drain, put in stock pot. Add remaining incredients except parmesan cheese. Simmer on low for 50 minutes. Once the 35 minutes has passed, start to boil some water and make pasta as directed on the box. At 50 minutes add your cooked pasta.

Top with shredded parmesan.

I love this recipe...it's full of nutrition!

Gluten Free Chex Party Mix

6 cups GF Rice Chex® cereal
3 cups GF Erewon Amaranth Corn cereal
1 cup GF mixed nuts or pecan halves
2 cups bite-size Glutino GF pretzels

6 tablespoons GF butter or use 3 tablespoon butter or margarine and 3 tablespoons olive oil for low fat option
3 tablespoons GF Lea & Perrins Worcestershire sauce
1 1/2 teaspoons GF Lowry's seasoned salt
3/4 teaspoon GF McCormick garlic powder
1/2 teaspoon GF McCormick onion powder

You can mix and match cereals, crackers or pretzel bits to suit your taste - just use a total of 9 cups of cereal and 2 cups pretzels or crackers.


1. In very large microwavable bowl, mix cereals, nuts and pretzels, set aside.
2. In small microwavable bowl, microwave butter and olive oil uncovered on High about 40 seconds or until melted.
3. Stir in seasonings. Pour over cereal mixture; stir until evenly coated.
4. Microwave uncovered on High 5 to 6 minutes, thoroughly stirring every 2 minutes.
5. Spread on paper towels to cool.
6. Store in airtight container.
